A Ghanaian scientist is turning agricultural waste into a potential solution for food safety, finding ways to remove harmful heavy metals from rice-growing soils.
Dr. Kwadwo Owusu Boakye, a chemistry PhD researcher, has been studying the contamination of staple crops with toxic metals such as mercury, arsenic, cadmium, and lead. While much of the focus in Ghana has been on the environmental impact of mining, Dr. Boakye discovered that rice—the nation’s dietary staple—may also carry hidden risks.
Instead of stopping at identifying the problem, Dr. Boakye is pioneering practical, low-cost methods to mitigate it. His research explores the use of locally available agricultural materials—like rice husks, cocoa pods, and soda biota—as soil amendments. These materials can absorb heavy metals in the soil, reducing the amount taken up by rice plants and making the crop safer for consumption.
“Using these natural, locally sourced materials provides an affordable and sustainable way to protect both farmers and consumers,” Dr. Boakye explained. Early results from his experiments have been promising, showing significant reductions in heavy metal concentrations in treated soils.
Dr. Boakye hopes that such solutions, combined with better regulation of fertilizers and pesticides, and stronger collaboration between farmers and research institutions, can safeguard Ghana’s food supply. “Producing enough food is not enough if it slowly undermines health,” he said. “We must ensure that the food we eat is safe.”
This approach represents a shift in Ghana’s agricultural strategy: moving beyond production quantity to prioritize food safety, sustainability, and innovative, locally driven solutions.
